Materials
Eggs - 4
Potatoes – 2 (medium size, peeled and cut into cubes)
Onion - 1 (medium, finely chopped)
Garlic - 2 cloves
Ginger - 1 tsp (ground)
Tomato - 1 (chopped)
Turmeric powder - 1/2 tsp
Red Chilli Powder – 1 tsp (as per taste)
Cumin powder - 1/2 tsp
Coriander powder - 1 tsp
Garam Masala - 1/2 tsp
Oil - 3 tbsp
Salt - as per taste
Water - 1 cup
Coriander leaves - for garnish (chopped)

Step 1: Boil and fry the eggs
Boil the eggs for 10 minutes. Then put it in cold water and peel it.
Apply a little turmeric powder and salt to the eggs and lightly fry them in hot oil.
Step 2: Prepare the Masala
Heat oil in a pan and fry onions until light golden.
Now add garlic paste, ginger paste and tomatoes and stir well.
When the masala starts to release oil, stir in turmeric powder, red chili powder, coriander powder, and cumin powder.
Step 3: Cook the potatoes
Fry the chopped potatoes in the masala for 2-3 minutes.
Then cover the pan with 1 cup of water. Cook on medium heat till potatoes are cooked.
Step 4: Add the eggs
When the potatoes are cooked, add the fried eggs to the masala.
Sprinkle garam masala and cook for another 5 minutes.
Step 5: Serve
After cooking garnish with chopped coriander leaves and serve with hot rice or roti.
Special tips
If you like more spiciness, you can add green chillies.
